Happy fungi February. Are you enjoying the warm weather and partial sunshine? It is not surprising that both groundhogs, Punxsutawney Phil and Buckeye Chuck, have indicated an early start to spring. Whatever weather February brings, we are here to celebrate a mushroom themed Black History Month, Valentine’s day, cultivation classes and recipes.πŸ„β¬‡οΈ
 

Black History Month Spotlight: William Padilla-Brown

In honor of Black History Month, let us talk about a very passionate, influential educator and leader of the mushroom industry; William Padilla-Brown. He founded MycoSymbiotics in central Pennsylvania, a whole systems design, education, and research facility powered by a mushroom farm. He became known for his videos on cultivating the cordyceps mushroom, and grew into regularly hosting workshops on mushroom foraging, cultivation and extraction. Emalee and I (Kelley) took his very first mushroom extraction course last winter. He also founded MycoFest, an annual mushroom and arts festival, now on its tenth year - open to any and everyone.

William is a Multidisciplinary Citizen Scientist, not only in mycology, but also in permaculture systems and spirulina algae cultivation. His passion is contagious and you can tell how much he values community. William has created a hub of knowledge for his hometown community members in Harrisburg, PA and extends his offerings beyond. Right now, he is going on a Cultivation Workshop tour in Pennsylavania, California and London. You can see what he is up to here.

New Product: Reishi Tincture

Remember all the updates on our first outdoor bed of Reishi? Well it’s evolves from spore, to mushroom, to tincture. This product takes all the good-for-you nutrients from the Reishi mushroom and makes it easy for you to consume on a daily basis. Made with love at our farm using only the fresh fruiting bodies of our farm-grown Reishi.

Reishi is the most famous medicinal mushrooms because it’s wide array of applications. Thanks to the high polysaccharide content and triterpenoid compounds found within the mushroom. It has been called the mushroom of Immortality and the spirit mushroom, used for centuries and gaining popularity throughout the world.

Reishi has been used to manage cancer, allergies, liver disease, hypertension, insomnia, rheumatoid arthritis, neuro-degradation and anti-aging symptoms. This is currently one of my favorite resources for mushroom medicine summaries, here.

East Row Garden Club hosted us for their January meeting, where we presented all the ins and outs of our mushroom cultivation process. In the upcoming months, we will be hosting various courses at the Civic Garden Center, details below.

  • Thursday, April 25th at 6pm: Incorporating Gourmet Mushrooms into your Garden

  • Saturday, May 25th at 10am: In the Lab with Fungi

Mushroom of the Month: White Oyster

White Oyster mushrooms, Pluerotus ostreatus, are quickly becoming a customer favorite. White oysters differ from the other oysters because they have slightly smaller caps, a more delicate texture, and a vibrant white color, appropriately giving them the nickname of the β€˜pearl’ or β€˜snow’ oyster.

These mushrooms have a mild and versatile flavor that makes it easy to incorporate into any dish. Their delicate texture makes them a good choice for crisping up and cooking down. My favorite thing to do with them or top a blended soup with them, turn into deep fried mushroom nuggets or incorporate into a saucy pasta dish.

Scientists found that oyster mushrooms contain higher amounts of antioxidants than other types of cultivated mushrooms. Antioxidants are substances that reduce or prevent cell damage in your body. They also possess the ability to fight free radicals, which are linked to diseases like cancer. A meta-analysis found that consumption of 18 grams of mushrooms per day was associated with a 45% lower risk of total cancer than eating no mushrooms at all.

You can find oysters growing in the wild throughout Cincinnati year around, but they will most likely be more gray in color. They grow in clusters on dead or dying hardwood trees. But no need to forage, go find them at a partner restaurant, retailer, or fresh from the farmer’s market.
 

Recipe: Creamy Dreamy Cajun Pasta with Mushrooms

This recipe was a staple during my high-school and college years…and still is. This recipe was created by my best friend’s mom. Thank you, Jen!

What you need:

  • 1 large box of white oysters from Rich Life Farm

  • 3 tablespoons of chopped garlic

  • 1 cup chopped sun dried tomatoes (in jar with oil)

  • ΒΌ cup white wine or vermouth 

  • 3 cups heavy cream

  • Grated parmesan

  • Box of pasta (campanelle or any other wide noodle)

  • Salt

  • Pepper

  • Cajun Seasoning (like Tony Chachere’s Original Creole seasoning)

How to:

  1. Cook pasta al dente according to the packaging instructions. Then strain and set aside,

  2. Meanwhile, sautΓ© mushrooms in butter and sundried tomato oil, until golden brown and crispy, about 10 minutes. Add Cajun seasoning, then set aside.

  3. In a large pot or Dutch oven, sautΓ© garlic and sundried tomatoes until golden brown, about 7 minutes.

  4. Deglaze with wine or vermouth. Add wine/vermouth and cook and scrape until wine almost absorbed.

  5. Add the heavy cream and cook until thick and reduced to about half.

  6. Add the cooked mushrooms and pasta, then mix until combined.

  7. Season with salt and pepper and more Cajun seasoning to taste. Top it off with parmesan cheese and enjoy.

Delicious, comforting creamy pasta makes the soul feel good. Enjoy!

Abigail Street is a Mediterranean tapas and wine bar restaurant in Over the Rhine. The atmosphere provides a modern, cozy, yet vibrant space to enjoy friends and food.

All of us at Rich Life Farm dined at Abigail Street for our holiday party, trying almost every dish. And we can vouch, their food is amazing. The staff returned the favor and came out to tour the farm. It was a party.

We highly recommend you visiting them for drinks and eats. Open Tuesday - Saturday from 5 - 10pm and open until 11pm on the weekend.

Also, check out the two new restaurants that opened within the past couple of months who also added our mushrooms onto their menus; The Aperture in Walnut Hills and The Davidson in Downtown.
