Whoo-wee it’s been a hot past few days! And the mushrooms are not thrilled about it. We are cranking up the AC for the fungi and dunking ourselves in the pool to stay cool. New Products, but we need your help

Pete and Emalee were invited to vend, connect, and enjoy the Main Street Ventures Showcase last week. They met a bunch of local business folk, aspiring entrepreneurs and were able to share some knowledge on medicinal Lion’s Mane. They displayed the Lion’s Mane tincture and sampled out a Lion’s Mane infused coffee, but learned that many people do not drink coffee. Are you one of those people??

Continuing Education

Guess who is an aspiring herbalist? Me, Kelley! I have officially graduated from the Medicine Making Course with the Chestnut School of Herbalism this past month. The course focused on different types of plant medicine and their creation process, while highlighting plants that are commonly used. I intend to translate what I learned here and apply it to products Rich Life Farm can create with our mushrooms. I am most excited about continuing this education and becoming familiar and experienced with local medicinal plants across our region. In my own garden, I am growing two varieties of yarrow, calendula and elecampane.

Mushroom of the Month: Chanterelles

These are popular mushrooms and ones that you will have to find out in the wild because we do not cultivate them! We’ll tell you why, but first let’s learn a little bit about these guys, shall we?

Chanterelles, genus Chanterelles, grow during the summer months (June - September) all over the United States. There are many different species, but more common ones of this are are the Golden Chanterelle, Cantharellus cibarius, and the Smooth Chanterelle, Cantharellus lateritius. These chanterelles are yellow to orange in color, and we have been finding more pale-orange Chanterelles on the farm.

Chanterelles have a vase-like or funnel shape with a cap that is sometimes convex, sometimes wavy. Notably, they have fake gills running down the stem. Fake gills are more like ridges; being thicker, wavy and forked compared to true gills found on look-alike mushrooms. Once you find one, keep looking around and you’ll most likely find more.

Chanterelles are foraged because they are so delicious: a fruity taste reminiscent of apricots. So why don’t we grow them? Because Chanterelles are mycorrhizal mushrooms and rely on a relationship with trees. The fungi have a large mycelial network underground that expands throughout the forest and can infiltrate tree roots. This is a good thing! The fungi can then provide the tree with nutrients (like nitrogen) that the mycelium could reach, but the tree roots were not able to. In return, the tree offers sugars to the fungi. This symbiotic relationship is difficult to replicate in a controlled manner, so we allocate our efforts elsewhere. It makes the foraged-find that much sweeter!

Since they have that large network of mycelium, when you find them, do not be concerned about over-harvesting. Most of the mushroom is protected underground anyway. You could harvest every single mushroom you see, and next year (or maybe next week) just as many fruits will arise - granted the weather maintains ideal conditions for the mushrooms. You’ll have the best luck 2-4 days after a rain fall.

We wish you some mushroom-finding success! Keep in mind, there are many poisonous mushrooms out there, so make sure you have the right species. Consult with an expert.

 

Recipe: Chanterelle Ice Cream

Here is the PERFECT way to stay cool throughout these dog days of summer:

What you need:

  • 1/4 lb chanterelle mushrooms (fresh), or 1- 2 ounces dried

  • 1 1/2 cups heavy cream

  • 1 1/2 cups half and half

  • 1/2 cup sugar

  • 6 large egg yolks

  • 1 pinch sea salt

How to:

  1. Gently simmer the chanterelles in a mixture of half & half and heavy cream for about 5 minutes.  Blend the mixture with a stick blender until smooth.  

  2. Separate 6 eggs, reserving the whites for another use.  Whip the egg yolks, and slowly pour a bit of the hot cream mixture into the yolks, whisking constantly.  Add a bit at a time until it's all incorporated.

  3. Transfer the mixture back to a saucepan, and add in the remaining ingredients. Cook on very low heat until it thickens enough to coat the back of a spoon.

  4. Refrigerate until cold, and then freeze the cold custard in an ice cream maker following the manufacturers' instructions.
