Hi, Happy December!

This month we are celebrating the holidays with our favorite winter mushrooms and spreading the cheer at the Hyde Park Winter Farmer’s Market. We picked the most royal mushroom for December’s mushroom of the month and have a couple gift ideas for you.
 

Mushroom of the Month: King Oyster

King Oysters, Pluerotus eryngii, or Royal Trumpets are mushrooms fit for royalty. They are the largest variety of Oyster mushrooms, hence the common-name, King. They feature a dense stalk and a smaller round cap connected by delicate gills. These mushrooms favor cold weather, making it a winter special.

King Oysters are one of the more challenging mushrooms to cultivate. King Oysters like to be cold-shocked; meaning they require an abrupt drop in temperature to trigger mushroom growth. Plus they are slow growers, so constant monitoring is required. King Oysters are worth the extra effort since they are only found naturally in Southern Europe, North Africa, Central Asia and Russia.

King Oysters have the density and texture for a very satisfying vegan or vegetarian meal. Try these the next time you want to eat like royalty.
 

Recipe: King Oyster β€˜Scallops’

Here's what you need:

  • 1 large box of King Oysters from Rich Life Farm

  • Olive Oil

  • 1 tsp Sea Salt

  • 1 tsp Ground Black Pepper

  • 1 tsp Paprika

  • 4 tbs butter (vegan butter for a completely vegan dish)

  • 3 cloves garlic (crushed)

  • 1 tbs lemon juice

  • 2 tbs Parsley

How to:

  1. Slice King Oysters into 1 inch disks, creating the oyster scallops.

  2. Brush the oyster scallops with olive oil and sprinkle on sea salt, black pepper, and paprika.

  3. Preheat cast iron skillet on medium heat and coat with a thin layer of oil.

  4. Add the oyster scallops to pan, season side down. Listen to that sizzle!

  5. While the first side is searing, season the other side with sea salt, black pepper and paprika.

  6. When the underside is golden brown (about 2 minutes), flip.

  7. When the second side is golden brown (about 2 minutes), remove oyster scallops from the skillet and set aside.

  8. In the same skillet, add butter and crushed garlic cloves.

  9. Cook for about 1 minute, making sure the garlic browns and fills the kitchen with it’s fragrance.

  10. Add lemon juice and parsley to the pan and then turn off the heat.

  11. Add all the mushroom scallops back to the pan. It's okay to crowd them in the pan at this point because they are only going back in to get coated with sauce, or you can do them in two batches.

  12. Gently move the scallops around in the sauce, and use a spoon to gently pour sauce over the top of the scallops.

  13. Serve with a sprinkle of black pepper, fresh chopped parsley, and fresh lemon slices.

  14. Enjoy! Snap a photo and let us know how you liked it.

ETC Produce & Provisions makes shopping local more convenient than ever. ETC offers online grocery shopping and has introduced NEXT DAY deliveries for only $5. Check them out in person or online. They pack our mushrooms in pints and can be found in the refrigerator section.

Daylily Deli has opened up this past summer, supplying Eastern Ave with only the finest sandwiches and coffee. They even have a bodega where you can find all the culinary essentials; even boxes of Rich Life mushrooms!

Redden Fine Meats and Seafood in Madeira opened last April and has blossomed into a community staple. You can find house-made sausages, soups, and sandwiches along with other local products. They are our newest reseller, go show them some love. Retail boxes can be found in the refrigerated grocery section.

Pipkin's serves the Montgomery community as a local grocer and garden center. They carry seasonal produce, specialty groceries, and a vast selection of annuals, perennials, pottery, and hard goods. Retail boxes found on the top shelf in the vegetable section. Open 7 days a week.
 

Why it’s important to cook mushrooms

Mushrooms are loaded with nutrients that can only be absorbed if the mushrooms are cooked. To know why, we have to take a molecular-look.

Have you heard of chitin? Chitin is found in shellfish and insects. It makes up the hard exoskeleton of these creatures. Similarly, mushrooms protect themselves with a chitin cell wall.

In order to consume mushrooms and absorb all those nutrients, the chitin cell wall needs to be broken down. Chitin cannot be broken down in our stomachs. Have you ever had a upset stomach after eating mushrooms? It was probably raw or undercooked.

Heat is the best way to break down the chitin wall. Whether you roast, sautΓ©, or boil, cooking the mushrooms will cause the chitin to break down and allow the nutrients to become bioavailable to your body.

Some of those nutrients include proteins, fiber, Vitamin B, Riboflavin, Niacin, and beta-glucans. Specifically, the fiber in King Oysters were found to lower cholesterol in rats, signifying a similar effect for humans (read more here).

Cooked mushrooms taste better and are best for the body.
