Congrats to Idyllwild Farm

Do you recognize the a fellow Farmer’s Market vendor, second on the right? That’s Mike of Idyllwild Farm! You might know him as the fellow selling some fine produce and even more stunning tulips. He, alongside eight other entrepreneurs, were received grants from Main Street Ventures to build and grow their businesses. We can’t wait to see what blossoms from this grant.πŸ˜‰ Congrats to all the grant recipients.
 

Fabulous use of Fungi

Researching at Xavier University, Lindsay is studying the use of mushroom mycelium to filter out toxins in contaminated water. We donated mushroom substrate and blocks of Blue Oyster for her to study. She told us about her project:

β€œRich Life Farm & Fungi donated two types of substrate to me: blocks of sawdust and soybean hulls (control substrate), and blocks of sawdust and soybean hulls that had been inoculated with mycelium and allowed to fruit oyster mushrooms several times (treatment substrate). In my project, I shoved each kind of substrate into silicone tubes. I then made a solution that contained a known amount of microplastics, fecal coliform bacteria, caffeine, and food dye. Then, I sent the contaminated solution through each of the tubes and collected the filtrate that came out. Next, I measured the concentrations of each contaminant in the liquid that came out of the tube filled with uninoculated/control substrate and the liquid that came out of the tube filled with myceliated substrate. I did this process five times, so five control tubes and five mycofilters.

There are two ways one can approach the results of this experiment:

1. The whole picture: I found that the control substrate and the myceliated substrate were equally good filters. Sawdust filtration is already a really good way of removing contaminants from water. Adding mycelium to sawdust does not make it any worse or better at filtration. Although mycofiltration is not more effective than sawdust filtration, it is still superior in many ways. Mycelium is regenerative under the right conditions. Myceliated sawdust lasts longer and holds its shape better than plain sawdust. Mycofiltration is a more sustainable yet equally effective version of sawdust filtration.

2. Ignore the control/sawdust filter. The mycofilter works! My mycofiltration system reduced the number of viable E. coli cells (fecal coliform bacteria) in solution by 88%, and the number of microplastics in solution by 99%. Caffeine and blue food dye concentrations decreased by 73% and 85%, respectively, after mycofiltration. Mycofiltration can be a sustainable and inexpensive way to treat contaminated waters and reduce the harmful effects of pollution.”

So cool!

 

Mushroom of the Month: Queen Oyster

Here is a regular mushroom in the Rich Life Farm & Fungi rotation, the Queen Oyster. They are also called Black Pearl Oyster, but we find β€˜Queen’ more fitting because they have similar elements to the King Oyster. And what’s a King without a Queen anyways?

Queen Oysters are loved for their flavor and versatile culinary applications. They bring a woodsy, mushroom umami flavor to a dish. Since their stems are thicker and more dense, like King Oysters, they are able to be cross-hatched and marinated nicely. But they can be minced, sliced, shredded, you-name-it, for whatever meal you are preparing.

Queen Oysters are growing really well right now, too! The colder temperatures in the Queen city has cooled down the air in the facility to make it optimal for fungi growth, even though us farmers might be a tad cold. We’re happy to do it for these beautiful, pearlesque queens! Check out the Queen Oysters next time you see us at the markets.
 

Recipe: Wild Rice and Mushroom Soup in a Slow Cooker

This dish is surprisingly very simple, and so, so delicious. I made this with Queen Oyster and Chestnut mushrooms in a Dutch oven roasting the oven rather than using a slow cooker.

What you need:

  • 2 Large bags of mixed mushrooms

  • 4 tablespoons unsalted butter

  • 1/4 all purpose flour

  • 5 cups vegetable or chicken stock

  • 1/4 cup dry white wine

  • 1 cup wild rice

  • 2 celery stalks

  • 1 yellow or red onion

  • 1 large carrot

  • 6 garlic cloves

  • 3 sprigs of fresh thyme or 1 teaspoon dried

  • 1 teaspoon garlic powder

  • Salt and black pepper

  • 1/2 cup sour cream

  • chopped scallions and fresh dill for topping

How to:

  1. Melt the butter completely in the microwave, about 1 minute and 30 seconds. With a fork, whisk the flour into the butter until smooth. Then microwave the roux until it is steaming hot and bubbly around the edges, about 30 seconds.

  2. Scrape the roux into a 6 or 8 quart slow cooker and whisk in the stock and wine. Stir in the mushrooms, wild rice, celery, onion carrot, garlic, thyme, garlic powder, salt and pepper. Cook on high until most of the rice grains are just slightly split open and the vegetables are tender, about 4 hours. If you do not have a slow cooker, you could add the contents to a dutch oven, cover with the lid and cook in the oven at 325℉ for 2 hours.

  3. Turn the heat to warm. Put the sour cream in a small bowl and slowly whisk in a few spoonfuls of the hot soup until smooth, the stir the mixture into the soup. (This prevents the sour cream from separating.)

  4. Divide amongst bowls and top with scallions and dill. reheat any leftovers on low until warm. (Boiling can cause the sour cream to break.) Enjoy!

 

Partner Spotlight: Colette

From chef Danny Combs, Colette is a mostly French restaurant located in Cincinnati's Over-the-Rhine, just across from Washington park. Their menu celebrates the artistry and tradition of French cuisine while exploring modern sensibilities and diasporic influences from Montreal to Morocco.

The food was delicious and excellent service to match. The mushroom dish is an entree serving our oysters breaded, fried and topped with a tahini hollandaise. It is prepared like an entree, but can serve as a perfect appetizer for a large party.

Colette has been open for about 1 year now and has made a mark on Cincinnati. Rated β€˜Cincinnati’s hottest new restaurant’ in January, receiving praise from food critics and living up to the French standards of food. If you want tasty food, visit Colette.
