March is a wonderful month when basketball fans celebrate March Madness, Kentucky coyotes find their procreation partner, and we cheers to all things green on St. Patricks’ day. More importantly, March brings us this mushroom newsletter. Mushroom madness, anyone?
 

Farmer’s Market Updates

Rich Life Farm’s Emalee and Kelley have been learning, researching and preparing a mushroom medicinal line to expand our offerings and become your one-stop-shop for all things mushrooms.

These new products will help make it easy for you to incorporate mushrooms into your daily routines without any preparation time. And you will be able to share the magic of mushrooms with your loved ones who may live far away or hate eating mushrooms. We are excited for the new things coming soon.

Mushroom of the Month: Shiitake

Shiitake mushrooms, Lentinus edodes, are definitely a favorite amongst our customers. These familiar mushrooms can be found in specialty grocery stores, but you can taste the difference with ours because they’re grown with love and care.

Cultivating Shiitake mushrooms take more time than other varieties, but we put in the time because we know they are what you want. Plus, they’re so delicious. During incubation process (when the mushroom mycelium consumes the substrate), the block begins to β€˜popcorn’ and turns brown. Then the block produces a brown liquid of the mushroom’s enzymes. That let’s us know it is time to grow out the mushrooms! Shiitakes grow from all sides of the block, making for a bountiful harvest.

Shiitake are native to Japan, China, and other Asian countries with a mild climate. You could find shiitake in North America if you stumble upon a logs that have been inoculated with shiitake plug spawn.

Medicinally, Shiitake have been used in traditional Eastern medicine since ancient times. Shiitake have been studied for their anti-tumor, immune-regulating, antiviral, and hepatoprotective effects. There are an array of beneficial compounds in these mushrooms, but one of the most notable is lentinan. Lentinan may block the formation of carcinogenic N-nitroso compounds - meaning shiitake can protect you from carcinogens. You can read more here.

Recipe: Mushroom Jerky

Here's what you need:

  • 1 large bag of Shiitake from Rich Life Farms (can substitute King Oysters)

  • 1/4 cup low sodium soy sauce (if you do not have low sodium, only use 1/8 cup of soy sauce or else it will be very salty!)

  • 1 tablespoons unseasoned rice vinegar (or apple cider vinegar)

  • 1 tablespoon of sesame oil

  • 1 tablespoon maple syrup

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon red pepper flakes (optional)

  • 1 teaspoon black pepper

How to:

  1. Prep the mushrooms. Remove and reserve the stems (if using shiitake only). Tear or chop the mushroom caps in large, equally-sized pieces, leaving any smaller caps whole.

  2. Make the marinade. Whisk the soy sauce, rice vinegar, maple syrup and spices together in a large mixing bowl. Add the mushroom caps and stems to the bowl, then gently toss until everything is well coated in the marinade. Cover the bowl and refrigerate for 2 - 24 hours.

  3. Cook the jerky. Use either method:

    1. Oven method: Preheat the oven to 250Β°F. Line a baking sheet with parchment paper. Drain the mushroom piece of any excess marinade, then place them on the baking sheet in an even layer. Transfer the baking sheet to the oven and bake for 1 hour. Flip the mushroom pieces over, then continue baking for another hour until the mushrooms have a firm, but pliable texture.

    2. Dehydrator method: Dehydrate for 6 hours at 145 degrees Fahrenheit.

You can enjoy the jerky immediately or store in an airtight container in the refrigerator for up to one week. Thanks, People’sChoice for this recipe.

Fun Fact!

Do you know the largest organism on the earth is? It is a mushroom and their mass of mycelium! The discovery of this giant honey mushroom, Armillaria ostoyae, in 1998 heralded a new record holder for the title of the world's largest known organism. You can find this fungus in Oregon’s Blue Mountains spanning out 2,344 acres. That is 1,665 football fields! This mass is estimated to be 2,400 years old, but could be as ancient as 8,650 years. So it might be one of the oldest organisms as well! Mushrooms are magnificent.
