Mushroom of the Month: Comb Tooth

Comb Tooth is unique looking mushroom with intricate branching and spindly 'teeth' hanging down from them. Comb tooth, Hericium coralloides, is in the same family as Lion's Mane and shares some similar medicinal properties. This mushroom is often associated with benefiting brain function and may have potential to help with symptoms of Alzheimer's disease.

Comb Tooth has a savory flavor and great texture. The spindly teeth make for fantastic crispy bits when sauteed or roasted. We love to chop up Combs Tooth finely and use it as a protein alternative (e.g. Comb Tooth tacos).

 

Recipe Idea: Mushroom Bread Pudding

Here's what you need:

  • 4 cups of bread cubes (preferably brioche or challah)

  • 2 lb chopped up Mushrooms (2 large variety boxes)

  • 1/2 cup finely chopped shallots

  • 2 tablespoons of butter

  • 1/2 cup finely chopped parsley

  • 2 cloves of garlic

  • 4 large eggs

  • 1/2 cup of Parmigiano-Reggiano

  • 1/4 cup chives

How to:

  1. Pre-heat oven to 350Β° F

  2. Chop bread into 1 inch cubes.

  3. Bake bread cubes for 10 minutes, until they are dry and brown.

  4. SautΓ© shallots in butter over medium-high heat, then add the mushrooms with salt, pepper, parsley, and garlic. SautΓ© for 15 minutes until browned.

  5. In a large bowl, whisk eggs, cheese, salt, and pepper. Then add the mushroom mixture and stir.

  6. Next, add the bread cubes and let stand for 10 minutes. 

  7. Finally, scoop the mixture into single serving ramekins or a shallow baking dish and bake for 30 - 35 minutes.

  8. Sprinkle chives on top for serving!

The summer market season is closing. We had a blast at the Madeira Farmer's Market and the Hyde Park Farmer's Market. Luckily, we will continue on at the Hyde Park Winter Farmer's Market at Madtree Brewing. The winter market starts this upcoming Sunday (Nov. 6) from 10am - 1pm.

The market will be every Sunday 10am - 1pm,
except Nov. 27th, Dec. 25th, Jan 1st, and April 9th.

Thanksgiving Mushroom Pre-Order

Thanksgiving is approaching. Now is your chance to pre-order delicious, gourmet mushrooms to share with your friends and family!


You can reserve mushrooms for pick-up. We can have your mushrooms ready at the Sunday Market (Nov. 20th) between 10 - 1 at Madtree Brewing, OR you can pick up at our farm on Tuesday (Nov. 22nd) between 4pm - 7pm. There will be a two pound minimum with a variety of mushrooms in each order. Payment will be required before pick-up and ordering ends on Friday, November 18th at noon. We are going to close the order form once we reach 200 pounds total, so don't wait.

Restaurant Spotlight: Fausto

Fausto is a gem located in the Contemporary Arts Center open for lunch, Tues-Thurs 10:30 - 2:30. Right now, they are transforming Lion's Mane into a Chorizo Sandwich! The housemade lion's mane chorizo is topped with caramelized onion duxelle and chow chow, then hugged by a ciabatta bun. Simply delicious!
