Farmers Market Update!

It’s getting cold, so the Hyde Park Farmers Market is moving indoors to Madtree Brewing on Madison Ave. Now you can stay warm while purchasing local goodness from your favorite farmers all winter long.

New market alert! Rich Life Farm takes on the Northside Farmers Market. Every Wednesday evening, you can stop by to get our mushrooms along with bread, microgreens, local vegetables, sustainable meat and more from other vendors. This is my (Kelley) neighborhood, and we look forward to deepening our connections with the Northside community.

Time to get crafty!

Get into the spirit with some fungi fun. We have TWO craft ideas for you.

First, mushroom decor made with cotton balls. Most of these supplies are probably in your home right now! Follow this tutorial to make mushroom hangers that you could suspend them from the ceiling for a mystical mushroom ambiance. Or turn it into a table decoration. For this, we suggest using a thick stick or wine cork as the mushroom stem instead of the wire wrapped in cotton ball. Also, if you are like me and have a random bag of buttons laying around, experiment gluing those on top in replacement of painting on the white dots. Making a truly one of a kind masterpiece.

Another idea, but it involves taking a trip out to the forest to collect wild mushrooms (and maybe some moss, cool sticks, and colorful leaves, too). This simple tutorial explains on how to create a mushroom wreath or table center piece with a Styrofoam base and minimal resources. However, that display will have a short lifespan. Another option, is painting mushrooms with resin for long-term solution. Then you can turn these mushrooms into earrings or set up in a glass display for decoration. Mushroom of the Month: Queen Oyster

We call these Queen Oysters, but they are more commonly known as Black Pearl Oysters. They are the perfect balance of the delicate flavor of Blue Oysters and the heartiness of King Oysters. These mushrooms start as dense, clusters that stretch and pop into a mature mushrooms with thick stems and pearly black caps.

Black Pearl Oysters have a sweet and woodsy taste, but a fairly mild favor for mushrooms. Their uniqueness comes from their thick stem, making it a perfect mushroom to marinate and grill or throw into soup or mince into a mushroom mash. They are slow growers, so their availability will vary throughout the winter. So make sure you visit us on a weekly basis.

 

Recipe: Creamy miso butterbeans and crispy soy mushrooms

What you need:

  • Large bag of Rich Life Farm mushrooms

  • 1 tin of butterbeans, drained

  • Β½ an onion

  • 4 cloves of garlic

  • 1 heaped tbsp of miso paste

  • ΒΌ cup of plant milk

  • 3 tbsp of soy sauce

  • 1 tsp of chili oil (optional)

  • handful of spring onion and chives

How to:

  1. Tear or chop the mushrooms roughly and douse in soy sauce. Roast on medium heat pan until crispy, about 8 minutes. Remove and set aside.

  2. In another pan, sautΓ© onion and garlic until caramelized, about 3 minutes.

  3. In a food processor, add the onion, garlic, drained beans, miso paste, and milk. Blitz until very smooth.

  4. Spread the mixture on a plate and top with the mushrooms, chili oil, chives, and green onions.

Meet Kebra and Andre, chef and creators of Aspired Vegan, a company dedicated to plant-based foods for healthy lifestyles. Kebra has been incorporating Rich Life Farm mushrooms into her dishes for months now and just recently opened up her store front. Congrats, you two!

Aspired Vegan Cafe is a gorgeous and cozy restaurant with all vegan foods, mostly gluten free meals and nutritious drinks and snacks that are made in house.

You can visit the restaurant at 6010 Vine Street in Elmwood Place. Open Monday 1-7pm, Tuesdays 3-7pm, Friday 12 - 7pm, and Saturday 1 - 7pm. Happy dining!
