Venturing into the outdoors

New developments on the farm! Pete took on the project to install an outdoor grow tent for mushrooms and now it’s full with little Reishi antlers. The tent is tucked into the woods and under tree cover. Being outdoors, the Reishi is exposed to harsher conditions, like drastic day/night temperature differences, varying levels of moisture (rain) and semi-direct sunlight. We think these factors will stress the mushrooms out just enough to promote general growth of the Reishi and potentially promote an increased amount of medicinal compounds within them. The mushrooms were introduced to their outdoor bed about two weeks ago. We will keep you updated on their progress. Anybody have a good timelapse camera for sale?

Mushroom of the Month: Reishi

Reishi, Ganoderma spp., is arguably the most popular mushroom in the world. It has been used for over 4,000 years. In fact, the father of Chinese Medicine, Shen Nong, wrote about Reishi in the β€˜Classic of the Materia Medica’ or β€˜Shen Nong’s Herbal Classic’ around 25-220 AD. And now, Reishi is gaining popularity all across the world for it’s medicinal properties.

The list of potential health benefits includes: inhibiting cholesterol synthesis, lowering blood pressure, inducing apoptosis, inhibiting histamine release, anti-inflammatory, inhibiting viral induction, antioxidant, anti-tumor, CNS sedation, antimicrobial, immune modulating, and liver protection. The β€˜Mushroom of Immortality’ is a common nickname for it.

All these health benefits are contributed to the polysaccharides and the triterpenoid content within the mushroom. Some polysaccharides are the primary contributors to the fight against cancer cells, specifically effective in breast and prostate cancer patients. Other polysaccharides target low-density lipoprotein or the β€˜bad’ cholesterol that can help lower blood pressure. And others are found to level blood sugar content, receiving praise from those with type 2 diabetes. While some triterpenes are linked to having a sedative effect, specifically lending itself to a insomnia-treatment or anxiety aid. There are numerous amounts of polysaccharides and triterpenes that are continually being studied and linked to other various medicinal benefits. This only scratches the surface of all the potential a Reishi mushroom has to offer.

The more modern science focuses on fungi within the medical community, the more trials and studies will be able to prove the power of Reishi. A good article for all the information above can be found here.

Reishi naturally grow from dead or dying hardwood trees, with the exception of Ganoderma tsugae who grow on Hemlocks. Typically, the mushrooms are found in a conk shape, but are widely cultivated in antler form. These mushrooms have a beautiful color fade of brown into orange ending with white (the newest growth) with a waxy-like shine.

Recipe: Longevity Lassi

This longevity lassi can be the perfect pick-me-up for anytime of the day! An amazing recipe from Fantastic Fungi Community Cookbook.

What you need:

For the mushroom ice cubes:

  • β…› ounce of dried Reishi

  • 1 Β½ cups water

  • 2 tablespoons of honey

  • Β½ teaspoon turmeric

  • 1 teaspoon finely grated ginger

  • Β½ teaspoon cinnamon

  • Β½ teaspoon ground cardamom

  • Β½ cup oat milk, almond milk, or light cream

For the lassi:

  • 1 banana

  • 1 cup plain Greek Yogurt

  • 1 teaspoon cacao powder

  • 2 mushroom ice cubes

  • 1 teaspoon honey or maple syrup

  • Ground cacao nibs (optional)

How to:

Make the mushroom ice cubes first. Place the Reishi chunks into a saucepan. Pour water over them and bring to a boil over medium heat. Lower the heat and simmer for half and hour, them removed from heat and allow the tea to sit for a few more minutes. The tea should be a deep brown color and be reduced to about Β½ cup. Strain, stir in the honey or maple syrup, turmeric, ginger, cardamom, cinnamon, and oat milk, and let cool. Pour into an ice cube tray and freeze. (The spices will not thoroughly dissolve and that’s okay). This should make about eight 1-ounce cues, enough for 4 drinks.

Then make the Lassi. Place the banana, yogurt, cacao powder, 2 power mushroom ice cubes, and additional honey or maple syrup to taste in a blender and blend. Served garnished with ground cacao nibs, if you like.

Simply delicious!
 

Partner Spotlight: Mid City Restaurant

Mid City was opened by Mike Stankovich, who you might also know as the founder of Longfellowβ€”a chic, creative cocktail bar. Mid City follows a similar vibe, paying homage to vintage dining cars creating classic, cozy comfort. And their food is phenomenal.

Last September they were one of the top 50 best new restaurants in America and continue to grow into one of Cincinnati’s favorites. We highly highly recommend the mushrooms in foil small plate. The crew at Mid City know how to treat them.

You can make a reservation or walk in for seating at the bar and patio. Open Wednesday-Friday, 5 pm-10pm, Saturday 11:30 am - 10pm, and Sunday 11:30am-3 pm. They are located off the Court Street Plaza in the alley between Central Parkway and Court Street.

A wonderful customer of ours has been taking our mushroom scraps and trimmings from the market to incorporate into her compost for her garden. The picture on the left is nasturtiums planted WITHOUT the mushroom compost amendment and the picture on the right is the nasturtium bed planted WITH the mushroom compost. So cool! The mushroom compost has active mushroom mycelium and a good bit of nitrogen with potential to support many varieties of plants. Eventually, we hope to offer the compost to all. Until then, keep composting!
